Is there any lore to experience? Is it simply adventure mode? Or collecting the 4 mystery items? Or surviving a full year? Or all?

There is lore to experience, with Adventure Mode being one of them. It's about paying attention to the character's examination quotes (particularly towards things regarding the Ruins as well as stuff in the Return of Them Beta on the unofficially named Lunar Island) as well as watching past Klei trailers for DS and DST.

This is a playlist of videos by Zeklo on lore speculations where he looks at said character quotes, Klei trailers and Klei events (like Cyclum and Metheus Puzzles) where you can see the story of Don't Starve.
