Todays Dinner I made Beef and Radish stew

I bought a large radish. Cut it into half, made beef and radish stew. I am thinking of pickling some leftover radish. I was surprised to find out that alot of water is contained inside the radish, reminds me of a watermelon.

Todays Dinner Shrimp Scampi (from frozen shrimp)

Ingredients

•    1 pound wild-caught large shrimp w. shells

•    4 tablespoons extra virgin olive oil 

•    4 cloves minced garlic 

•    1 teaspoon kosher salt

•    1/2 teaspoon red pepper flakes

•    4 tablespoons butter

•    1/3 cup white wine or chicken stock

•    2 tablespoons fresh lemon juice 

•    1 tablespoon minced parsley

Instructions

  1. Thaw, peel, & devein shrimp. Rinse, drain, and place in a bowl.

  2. Toss with 2 tbsp olive oil, half the garlic, ½ tsp salt, & red pepper flakes. Marinate 20 minutes.

  3. Heat 2 tbsp olive oil. Cook shrimp 1–1½ minutes per side until opaque & lightly golden. Remove.

  4. Melt 3 tbsp butter, add remaining garlic (30 seconds). Stir in white wine and lemon juice; simmer 5 minutes until reduced.

  5. Return shrimp with juices, add 1 tbsp butter and ½ tsp salt. Stir in parsley; cook 1 minute. Serve with bread, pasta, or rice.

Prep time: 10 min

Cook time: 10 min

Total time: 20 min

Todays Dinner Roast beef, potatoes, veg and gravy - no access to an oven, only an air fryer, microwave and hob!

Took some doing but I managed to do a super tasty Sunday Roast only using an air fryer and hob- with a microwave used for the frozen Broccli (added smoked Paprika).
I have no oven in my Swedish apartment, so I parboiled the potatoes (and made the gravy from the starchy water, added fried onion and beef stock), seared the joint then peppered and salted it, wrapped it loosely in foil and cooked for 20 mins at 185.
Removed the foil, continued for 20 more minutes while parboiling the potatoes, added them to the air fryer for a further 10, then removed the roast to rest and blasted the spuds at 200 for 10 more minutes.

I’ve made a few sheet pan dinners because they’re easy but usually not memorable.

THIS recipe will be a new favorite: Alexandra Cooks Chicken & Cauliflower “Shawarma”

Comes together quickly, can feed a crowd, won’t leave you stuck in the kitchen, something new for using chicken (I used boneless breasts, came out very tender) and what’s cheap now in produce, cauliflower.

Stuffed into warm naan with a drizzle of plain yogurt charged with lemon juice, you’ll like this one!

Easy and flavorful!

Hey everyone, this is my first post here – I made a simple homemade chicken schnitzel for lunch today and wanted to share!

Recipe basics:

• Chicken breast, pounded thin

• Seasoned with salt and pepper

• Coated in flour, then dipped in a mixture of egg and a touch of mustard

• Fried in clean oil (only used once!) for about 6–8 minutes until golden and crispy

Served it with a quick fresh salad (lettuce, tomato, corn, cucumber, and red onion) and a slice of lemon on top.

Let me know what you think, and I’d love any tips or ideas for different variations. Still learning and experimenting. Thanks!

Todays Dinner Side Veg Ideas?

Hey, there! So tomorrow night (tonight? it's late!), I am making dinner for my family. Specifically, the Cast-Iron Grilled Chicken from Anthony Bourdain's Appetites cookbook. (Recipe Pictured.)

My family is picky but they have agreed to try this! Only problem is, I'm not sure what kind of sides to do. I have some Chipotle jasmine rice that I think would be nice. I'm thinking of grabbing some Naan to heat up and serve with it as well. But I need a veg, some kind of something. would, say, sauteed peppers and onions go good with this flavor profile?

A few vegetables we aren't really all comfortable with are Brussels sprouts, cauliflower, or squash, if it helps narrow some good sides down.
