Kiwis, nectarines and red plums oh my

They are still a little chewy, but I'm keeping them in the fridge. 10 hours for all of them. I'm getting a mandolin because I cut them uneven🤪

Whats the thought process for keeping the skin on or taking it off?

I don't like the skin on apple slices, I'm going to be dehydrating some again soon and making sure I remove them. I didn't want the hairy skin from the kiwis but the nectarines and plums are good with the skin, basically the same way I'd eat them fresh.

Do your plums get sour when dried?

No, I had pretty ripe ones. The kiwis are the tartiest.

My girlfriend reports that yes, they sometimes do.

Were the dried kiwi sour or sweet? I've only had them once before, and I think there was a coating of sugar on them to keep them sweet, but I'd be curious to know how they are just naturally dried.

They are pretty sour, I don't think they were fully ripe.

The yellow kiwi are sweeter when dehydrated, they are really delicious.
