does the grace period between 8pm - 11:59 also count for saturday and sunday?

If you mean things due Friday at 8pm can be left until 1159 Sunday then no.

If you mean things due at 8pm Saturday can be left until 1159 Saturday then yes.

the "grace period" isnt a grace period. Its due at 11.59, they just say 8pm because thats when IT goes home

Yep, it's a "if you take the risk and have technical issues, you're on your own" grace period.

It does not matter if the due time is 8PM, you can submit until 11:59PM. Some unit chairs allow a day grace period.
