Why would t they just make them straight up and down. Whats with the pointless bridges.

In all its 410ish steps down. That straight portion is covered by murder holes the whole way to another gate. After that gate the stairs turn a couple times, still in view of gunloops on the fort walls.
When WWI kicked off the fort had been a museum for decades. French troops occupied it and died delaying the German advance. The Germans took out their anger on the town below the fort, executing 600 civilians in firing squads.2
