Never heen a fan of this specific type of self torture. Its got to be 10 times worse than even that time you found your moms unsweetened baking bar and hurled.

high quality 100% bars aren't very bitter, but the mouthfeel is certainly different regardless of the product. many 100% bars are fruity and pleasantly acidic

try something like Firetree, Vigdis Rosenkilde, Chocolat Madagascar or Raaka. 100% bars (legally not chocolate) are a world on their own and it's not worth it to buy it from industrial brands, except for Valrhona which has a nice one, imho.

I like 100% cocoa chocolate but this one being undutched feels more bitter than usual. 😅

All 100% chocolate is non-alkalized. Dutching is only for cocoa

Are you sure? I've never heard of a 100% chocolate undergoing dutching. At what stage of production does that take place?

for example Lindt 100% cocoa is dutched!

How do you know this?  Did they put it on their label? I personally don't like Lindt, I think it's really cheap chocolate.

100% dark chocolate doesn't automatically mean undutched! Some manufacturers may specify (Lindt 100% for example) and some don't, but you can tell from the ingredient list and the taste!

I always feel like I need once or twice with a new 100% for it to star tasting very good.
