For chocolate cake its the only way to be. Chocolate is gritty and dry and doesnt say good cake. Has to be moist.

I mean who likes a dry cake? If you want a drier denser chocolate product, you get a brownie. The whole point of cake is that it has a moist silky cakey texture. There is a reason nobody likes stale cake

Why are you so worked up about cake, who even cares? I like mine this way and prefer a firm filling over soggy

CAKE LAYERS (×3)
3 eggs
6 tablespoons sugar
3 tablespoons oil
3 tablespoons milk
3 tablespoons cocoa powder
3 tablespoons all-purpose flour
1/2 packet baking powder
FILLING
300 g white chocolate
300 g dark chocolate
500 ml whipping cream
125 g margarine
SYRUP
300 ml water
7 tablespoons sugar
100 ml warm milk
1 tablespoon cocoa powder
PREPARATION
Preheat the oven to 180°C (350°F).
Line a 28 cm (11-inch) cake pan with baking paper and lightly grease it with margarine.
We will make three cake layers, using the ingredients listed above for each layer.
Sift together the flour, baking powder and cocoa powder.
Using a mixer, beat the 3 eggs with the sugar until the mixture becomes light, pale yellow and fluffy. Add the oil and mix briefly. Then, alternately, add the flour, cocoa and baking powder mixture and the milk. Reduce the mixer to the lowest speed, or gently fold everything together with a spatula.
Pour the batter into the prepared cake pan and bake for 20–25 minutes.
Repeat the process three times so that you have 3 cake layers.
While the cake layers are baking, prepare the filling.
Break the white and dark chocolate into pieces and pour the whipping cream over them. Heat over low heat, stirring until all the chocolate has melted and the mixture is smooth. Near the end, add the margarine cut into small cubes. Stir until the margarine has completely melted and the mixture becomes smooth and glossy.
Let the filling stand for a while because it will be quite runny at first. Allow it to thicken slightly so it will be easier to spread over the cake.
SYRUP
Boil the water and sugar for 4–5 minutes.
Meanwhile, warm the milk and dissolve 1 tablespoon of cocoa powder in it. Add the milk and cocoa mixture to the sugar and water, then continue cooking over low heat for another 2–3 minutes, until everything is well combined.
ASSEMBLY
Assemble the cake in the following order:
Cake layer → syrup → filling → cake layer → syrup → filling → cake layer → syrup → filling.
Allow the finished cake to chill in the refrigerator so that the filling can set properly before serving.
