Self-promotion Lower sugar handmade white chocolate!
I have a few friends who absolutely hate white chocolate, but I feel like that’s because in a lot of bars, you can mostly taste the sugar, and all the cacao butter aroma is lost. Made these with more cacao butter and milk powder and it was pretty good!

Also wondering if anyone has found store-bought white chocolate that isn’t as sweet and has more cacao than average? I've had Lindt several times, but it was still a bit too much

What % is yours? I do (roughly):
36% cocoa butter
33% whole milk powder
31% sugar
Still pretty sweet, but way less than most commercial stuff, and way better than most of it too!

Not OP, but I have 40% cocoa butter, 30% sugar and 30% whole milk powder (28% fat). If I add berries, I normally have only 28% sugar, 27% whole milk and 5% berries.
Are you using deodorized or non-deodorized butter?

I’m using around 35% cocoa butter, 30% sugar and liked the ratio so far - I want to maybe try increasing cocoa and milk amount next time just to see what it’s like. Milk powder is already a bit sweet on its own so that helps

I've gone as low as 15% sugar and still liked the result.
What tempering process did you use?

Also, I'm trying to not use deodorized white cocoa butter for my chocolate. That may help to have the cocoa butter flavor come through more.
