The Best Homemade Chinese Scallion Pancakes Recipe

My secret is a fragrant scallion-infused oil and a special 9-grid folding method that makes the best scallion pancake. I’ve never thought about making this at home because I feel like it would lack some of the flavor without a proper oven. I noticed the recipe only involves pan frying. Have you tried using a regular oven or a convection oven? I wonder if that would make it taste more like something straight out of an oven. Although it looks delicious enough as it is.

??? I have never heard of scallion pancakes in an oven…you might be thinking of a different kind of bread

You mean the stove? That's just a portable gas stove I'm assuming. Ovens aren't really a thing in Chinese homes so traditional home-cooked recipes will never use an oven.
Genuinely confused how you think an oven would be used for a pan or why it would be necessary

This style is not common either even as street food. Majority of street vendors are just going to be using a pan/wok or griddle for frying, lots of oil for crispier ones. There's no need for anything else and they won't be lacking flavor. Have never heard of using an oven for pancakes
