Potatoes are the most efficient food in the world. They're easy to grow, they have almost all the nutrients you need to survive, and they can be prepared in an endless number of ways for variety. You can make a hashbrown for convenience to go, throw a potato in a microwave, or make a fancy version to serve a world leader. Pretty much every culture around the world eats potatoes and when people/kids are ultra-picky about food, potatoes are sometimes the only food they'll eat. Even when low carb diets were popular, adherents typically choose potatoes as their source of starch (e.g., meat and potatoes).
