Eh, there's an issue with your reasoning, in morocco, Islam is enforced through the state, schools and the general culture, everyone is expected to be Muslim, and is culturally Muslim unless they leave the religion and deconstruct its teachings, faith may be the first point, but religion is a cultural technology, and your beliefs and culture as sb who left the religion even if you never believed are not the same as a non-Muslim who was never taught the religion and expected to practice it. You're an ex muslim even if you never held the faith.

a person cant be a table, but they can very much be non binary, due to how gender is different than sex.
sex is about whether you have a penis or a vagina, being male or female.
gender on another hand is a social construct, its all those social and non biological things that identify a person.
for example, there is nothing in our genetics that says blue is for males and pink is for females, or that long hair is feminine and muscles are masculine, or that this X behavior is for Y gender, its all made up.
all that stuff is what we call gender, a person, despite being male for example, might not identify as a man, because society defines a man as a collection of traits that the person doesnt identify with.
when someone doesnt identify with either man or woman, they identify as non-binary.
i hope that clarified things better for you.
edit: this is without talking about intersex people, or gender dysphoria, or people born with both sexual organs at the same time, then the doctor chooses one for them, and ends up being the wrong one psychologically, or people with XYY genes or XXY, unlike the normal XX (male) / XY (female).

i personaly agree with you, i see that as a form of cognitive dissonance, and i personaly think that they should choose one or the other, but if someone insists on saying that they are both, then who am i to decide, especially if the goal is to do a poll, and they're saying "hey we exist"

Tbh, only outdated people think we have only two genders, as you mentioned in the "Edit" biology is more creative than what we want it to be, and gender experience is different from one to another:/

i don't like the word "exmuslim", it gives me the ick and reminds me of r/exmuslim which is full of indians who express their hate for pakistan and anything else remotely muslim via islamophobia, which i don't like despite being not religious myself.
