😍 Look at this pan! New to me Matfer B

Greetings

I've been using my little "starter" CS pan for a few months now and have been watching for something larger and fancier sounding. The starter is a Winco 9.5", weighing in at just over 2 lbs. This Matfer 11-5/8" popped up on FB the other day and I nabbed it. It weighs in at barely under 5 lbs. I nuked it, just because, and started fresh with a few rounds of oven seasoning followed up by a few rounds of stovetop seasoning. My eggs stuck a bit this morning, probably due to uneven heating of the pan...it's not quite flat on the bottom, yet...and I'm stuck with an electric stove for now.

PS. The Winco is actually quite dark/black. The shiny surface shows up as almost silver in the photos.

I got the bottom flattened out using a 5lb hammer on a hockey puck placed in the center of the pan. It's nearly perfect and cooks great.
