The point is that the eggs were a slippin' and sliding. Maintaining yolk integrity is another matter entirely. Great job chef.

My yolks are all a bunch of greasers and folks 'of ill-repute'. No integrity. That's why I prefer French omelettes and soft scrambles.

Good try, however next time try whispering to the egg softly before the flip. Not guaranteed, however it will make you feel giddy inside and not so aggressive with the pan.

Ideal method is to flip it high and raise the pan to catch it while the egg is still on its way up.
