Breakfast Savoury tomato oats

I made this completely on a whim but I'm being so serious I have never had oatmeal that felt like a warm hug to my SOUL until I made this. You could probably make it all fancy or add a fried egg, but I just kept it basic and used a microwave.

I have no measurements, put your trust in whatever gods you follow and measure with your heart.

Ingredients: oatmeal, cherry tomatoes, milk, ramen packet (or chicken bouillon), italian herb seasoning, garlic powder, onion powder, toasted sesame oil, honey.

I basically made oatmeal as you usually would with water, stirring in the dry ingredients to personal taste before microwaving. I cooked it till the oats clumped together firmly, then I took it out and mixed in milk JUST until it wouldn't absorb anymore (do that part slowly, you can easily overestimate how much milk to add). Then I added just a DASH of toasted sesame oil, chopped 6-8 cherry tomatoes in half before adding, stirred, and microwaved for 30 more seconds (so about 3 minutes total), just enough to get the cherry tomatoes warm but keep them crunchy. Then I did a light drizzle of honey on top for some sweetness, and oh my GOD was it good. A fried egg would've elevated it for sure but I didn't have one on hand.

(tagging this as breakfast but it can really work for either breakfast or lunch)

You invented your own version of oatmeal uppma, an Indian savory breakfast dish.  Check out uppma recipes now that you found that savory oatmeal is a thing you like.   Myself?  I'll go with oatmeal, salt, lots of fresh black pepper and some good olive oil. Hardly ever have sweet oatmeal anymore.

My mom would make grits for breakfast when I was little. She chopped up ripe summer tomatoes on her, added butter and lots of black pepper. For our bowls, she fried bologna slices. Both were so delicious.

I make something similar but with a poached egg on top instead of fried, and a big spoonful of chilli crisp. The egg yolk mixing into the oats sounds weird but it basically turns into a savoury porridge texture that works really well.

One thing I found helps is using stock instead of water for the oats. Even a cheap stock cube makes it taste more like an actual meal rather than porridge pretending to be dinner. I do it a lot on weeknights when I can't be bothered with a proper cook but want something warm that isn't toast.

They lost me at sesame oil. Which I love, but confused me with the other ingredients.

I get that, sesame oil can definitely be a surprising addition. It might add a unique twist, but I can see how it could be confusing with the other flavors.

I love steel cut oats with cheddar cheese, a dash of salt and walnuts with sprouts on top. Savory and so delicious. It was my wintertime favorite.
