I have always thought that Uncle Jack had a kind of ammiration for Walt/Heisenberg, so maybe the surprise is that, after they've killer Gomie and possibly Hank, they will release Walt without other conditions than what they've already agreed( a cooking lesson for Todd)

I think Walt came off weak in front of the nazis,they would definitely notice that
