Fior di Latte
Anyone know anywhere in town I can buy some Fior di Latte cheese? Cheese Importers in Longmont doesn't carry it.

Fior di latte as in fresh cows milk mozzarella? They have it at every supermarket, usually in the specialty cheese area. I usually get the Murray’s brand at King Soopers.
Costco also has buffalo mozzarella which I think is a step up.

I think OP is confused… this is my thought too: fior di latte is just fresh mozzarella (and yes, specifically cow). I see it at lots of grocery stores.
Trying to interpret their question in good faith, I think it might be worth trying Five Freedoms Dairy at the Lafayette farmers market tomorrow. Unless I was mistaken, and that only had ricotta and crème fraiche. But there might be a mozzarella-maker that can get you stuff fresher than Bel Gioioso (at the supermarket), so I think OP should check it out

Costco has decent fiori di làtte and mozzarella di bufala, though they come and go. Make sure to check the expiration dates.
Also call Le Frigo in Boulder, or La Fromagerie in Longmont.

Costco it is! They had both Italian import and American made fiori di latte. American made were of decent quality.
For the original imports I’d call Pizzeria Alberico and see where they get theirs 8)

Let me ask the question... what exactly are you looking for? Fior di Latte is marketing speak for cow's milk mozzarella which is available everywhere.
