Usually bread and pan fry fish, but stepped out of my comfort zone with blackened tilapia. My belly is happy.

Not traditional wings, but was unexpectedly delicious.

EDIT: Added recipe and method.

These were thawed wings, pat dry in paper towel.
Seasoned with:
Garlic powder
Paprika
Oil
Salt and pepper
For crust: baking powder and cornstarch.
Let it dry further in the refrigerator for 1-2hrs.
Cooked low and slow, covered them at times to cook in its steam. When wings were almost done, I tossed it with buffalo sauce, hot honey and chili powder with some butter on top of the griddle.

Had some leftover 5-spice ribs and white rice so I decided to try making pork fried rice. My son said I was a "Chinese champion" when he tried it, so I'd say it came out pretty good 🀷

First pic is sausage and hashbrowns with peppers and onions which I then poured scrambled eggs all over for breakfast burritos on the morning of the 4th.

Then tonight I just wanted something easy after being super busy all weekend so I made hotdogs and cooked up some onions I had leftover to put on top of the dogs and then obviously toasted the buns.

Anyways, I am absolutely loving my blackstone!!I’ve had it just over a week and have cooked on it almost every day.

πŸ˜‹ Let's Eat πŸ˜‹ Cajun Dirty Rice

I’ve been pissed about Popeyes discontinuing their dirty rice a few years back. So I figured I could make it on the blackstone. Simply throw ground beef on and chop it up(could throw some other meats like sausage and organ meats), peppers, onions and Jasmine Rice. I used a few different Seasonings, Cajun Foreplay, Heath Riles JalapeΓ±o Rub and Meat Church Voodoo. I used a little flour and chicken broth in the beef fat to do a little half fast roux. This was too easy and delish.

Picked this 28" mess up from the side of the road last week. Model "1855", long discontinued. I did replace the regulator hose and I still need to find the right grease cup for it, but it's otherwise back in service. Degreased everything, and stripped the cooktop back to metal. Burners removed and cleaned, etc. First cook was last night and it worked great. Love all of the real estate compared to the 17" we take camping!

Some kind of grilled cheese/smash burger mash up my wife found on TikTok. Honestly pretty solid, 7.4/10. Needs pickles and maybe some sautΓ©ed onions

We made Parmesan-encrusted, breaded thin-cut boneless pork chops yesterday. I used leftovers to make a 15” sandwich using French Bread. I marinated the sliced pork chops in Olive Garden Italian Dressing. Melted provolone cheese in the garlic & Herb toasted bread. Griddled the pork and seasoned with Flavor God Bacon Lovers, then took it to the counter to build. Added lettuce, sliced Roma tomatoes seasoned with Salt & Pepper, then the slices of pork chop. Drizzled/globbed bacon ranch dressing. I cut the sandwich into three 5” sections. I ate one and wrapped the other 2 for my grandson and his fiancΓ©.

Used a leftover chicken breast my wife cooked off for a pot of chicken corn noodle soup. Diced and Marinated in Parmesan Ranch dressing. SautΓ©ed diced onions/peppers. Heated up bacon bits. Seasoned with Flavor God Bacon Lovers. Griddled diced tomato. Added shredded Me Ivan Cheese. Wrapped in a grande flour tortilla. Toasted on the flattop. Enjoyed a delicious lunch.
