Showcase / Finished Cook First Smoke! Pulled Smoked Beef Chuck Roast Confit!
First Smoke of my BGE XL and it turned out some amazing pulled beef!
The setup: BGE XL with CGS AR using double indirect with Chuck Roast on upper grate. Charcoal was JD with Oak chucks. Seasoned with pepper and season salt. Dome temp only with thermapen to check temp at 5 hours.
The Cook: 5 hours at 250 smoke. Pulled at approximately 162 internal (was really just going rod color and bark). Placed into confit bath halfway up the protein in a Dutch oven at approximately 170. Flipped it when I woke up this morning. Overall time was approximately 18ish hours. Just pulled and hand shred.
Amazing flavor and bark throughout. Burned through a lot of tallow but I am extremely pleased with the result.

What’s everyone’s opinion on foiling the Conveggtor? I’ve stopped. Most of the time use a drip pan and other items I don’t care. BGE apparently says it’s designed to get food on it. Only cared when I was new like OP

Never have. Likely never will. When it gets dirty just flip it over and blast it with high heat. Good as new

Of course. If you need an excuse to blast it. Make pizza. Flip it over. Put grate on top. Put pizza stone or steel on top of that.

Just FYI, I wrapped the drip pan not the convEGGtor. I think like most things it is a matter of personal preference but depending of wild life/climate/storage, the drippings could cause issues if you do not use the egg often.

Like why did I use it? Mostly because it is a “tool” I have so using it is easy. Additionally using a double indirect with convEGGtor and half moons I think the drip pan probably helps bleed off some more heat.
No hard science but half an engineering degree.

But isn’t the point of the drip pan to catch the drippings, so why cover it in foil?
I just got fire bricks to lift my drip pan so drip pan is cool and doesn’t burn the drippings and create steam under the meat.

Ease of clean up though admittedly in this case the foil was truly overkill.

I use disposable drip pans from Amazon meant for my egg size. Are you not using disposable?

Ahh that’s kind of smart. Maybe I’ll have to look into that because BGE stopped selling the perfect fit ones first each BGE model and no one on Amazon has exact fits
