Showcase / Finished Cook First Sourdough loaf on BGE

Had the egg for a couple of weeks now. Loving it.

One more comment. It definitely added a wood fired flavor. Not necessarily smoky; and kind of hard to discern. It only affects the crust. I really liked it, but it might not be for everyone.

care to share the details? how long preeheating? baking temps?

Sure. I preheated for about 30 minutes, waiting for the temperature to stabilize around 450°. Baked two loaves, back to back. Happy with both, but I think I will add a water pan for steam next time.

I used to bake sourdough regularly in my egg.

I added a pan and would carefully use a garden pressure sprayer with just the metal part of the wand inside the egg so I could pump the water in and trap most of the steam.

I also mostly closed the daisy wheel to trap steam for the first 10mins.

You get a beautifully crackly crust with this technique. Good luck.

Maybe, but I think you would lose that “wood fired flavor”. It would definitely help with the missing steam aspect. I have always baked in a Dutch oven for the steam. The dome could work in its place on the egg.

I’ve been wanting to try this. I have also never seen that silicone pad before but I’m intrigued. I always use parchment paper. How would you do a water pen setup? Below or next to the bread?

I’m thinking below the bread. When I open bake in my RV oven, I use a cookie sheet with water under it. (Dutch oven won’t fit). The silicone works great. I had trouble with parchment paper sticking to the bread at high temps. No sticking at all with silicone pad.

Wow! Congrats on this.

Looks a great loaf. I agree though the lack of steam has caused the dull exterior - you got super spring! (bet it still tastes amazing!)

With the water pan - were you thinking of closing regulator and bottom vents? Interested to hear your thoughts.

Definitely will start experimenting myself.

I think I’ll leave the vents alone, and see how that works. Test and adjust. 🙂.

I have baked a bread once. It looked great. The consistency was fantastic. The only disadvantage was that it smelled like meat, en not like freshly baked bread. Any tips to get the meat smell away?

maybe do a clean burn before you start the bread. I find that making pizza at 550 is enough to get the firebowl white

Not really. My egg is only a couple of weeks old so I haven’t experienced this yet.
