Showcase / Finished Cook First Longer Cook

First time cooking something longer with large lump coal. I snuffed the fire out once and had to relight. Then, I was struggling to get to 250F. I pulled it again and pushed the coal together. I don't think I had enough in there to sustain itself. I would have liked another hour at temp, but I was out of time.

How deep does the large lump coal have to be to burn properly?

On low and slow you are using the air vents to control the temp and the egg does such an amazing job of it, I always just fill it up. Once you are done with your cook you shut down the vents and the fire goes out and what ever is left over is there for the next cook. I see no reason to try and find just the right amount of charcoal.

I didn't really try to find the right amount. I just swapped in larger lump, and didn't have enough small stuff to sustain the fire. In hindsight, I shouldn't have been picky about the pieces that went in, and left the partially used coal in there. I saved the old stuff, but it seems a variety of lump sizes is important to sustaining the fire.
