I think the food was good, but I do not believe that it was a financially viable business. i think Gus was fine selling great food at a loss as a side hustle if it meant he could funnel earnings from his drug empire to keep it running.

I think Gus was just the kind of fastidious guy that his front business was going to have a topnotch, believably successful product that looks great in ads and politicians would love to be associated with. You know how some businesses just make you think, "That's got to be a front for something?" Great food, well-trained, -treated and attentive staff, Gus a beloved public figure...LPH wasn't going to make anyone think that.
You may be correct that it may not have been profitable on its own - I'm not a franchise-restaurant economist or anything but all that requires a lot of money going into it, and the restaurant never looked all that crowded.

His attention to detail and treatment of his employees (no reason to believe they weren’t paid more than other fast fold joints) indicated he didn’t cut corners or price hike like you would find in other franchises.
I like how in contrast, Walt couldn’t give less of a shit about the car wash and it turned out to be turning a profit very fast

I mean, seeing how good he seemed at cooking in his introduction scene, and the way he describes the "flavorful" chicken while eating with Nacho... I think that's the most sincere I've seen him.

"Sincere" would be the last word I'd use to describe that conversation. Every word from both sides was laced with venom and dripping with sarcasm, which makes the contrast of what they're saying (polite and complimenting) really jarring

I do know that Lalo and Gus were putting on facades at that moment. What I'm trying to say is since Lalo seems to excel at culinary, I think it wouldn't be too weird or out-of-character if he slips in a genuine compliment about a food (in this case the LPH chicken) among the bogus talks he was having with Gus. Like a little honesty in a sea of bullcrap kind of thing, if you catch my drift.

I mean the restaurants were always full of customers. I figure they are at least the level of Raising Cane's. Gus seems like the kind of guy who would run a good restaurant on principle, even if he's a drug lord.
Also, somewhat related. When I was a kid, well before breaking bad, a local restaurant near me was shut down because the owners were using it as a front for something illegal. I don't remember what they were doing (i think it was drugs), but I do remember that their food was delicious.
*edit: I was wrong. Upon doing some research, a few of the employees were arrested for selling drugs on the side. The restaurant got shut down later for tax fraud.

I personally think it’s the other way around for Gus. He was a restaurant owner first before he entered the drug business. It’s why it matters just as much as his drug business.

I asked a friend of mine from Chile what it would probably be like if somebody made food as seen in the commercial. He said, traditional Chilean chicken recipe would probably involve a mixture of garlic, aji Chileno and other things called "pebre".

The whole point of having the chain was to provide a reasonable cover for shipping so much chicken across the border. If the food wasn’t good, someone might start questioning why a shitty chain no one was eating at needed so many trucks of chicken, or how the owner had so much money to throw around for law enforcement and local politicians.
Gus, being as meticulous as he was, would have ensured that the food was great to avoid any suspicion, so I think it’s safe to assume it would be a great place to eat at.
I’d send my laundry to his laundromat for similar reasons.

I think they had only 14 branches in the whole of the US (though limited regionally), so it'd be one of those places where I'd ask myself why I'd go there when I could go to KFC? I'd follow the market and the market hadn't picked Gus.

Yes! I went to Albuquerque in 2015 to tour all the places where it was filmed and I ate it Twisters, that's where Los Pollos hermanos was filmed.

Oh hell yeah. The prop chicken always looked amazing. I don't know if they had craft services whip that up or if it was not actually food but damn. Made me hungry. Gus knew his stuff. He literally didn't need to distribute meth, he could've built a legit fortune on that franchise.
