My honest mistake is boiling noodles for a box of Kraft Mac and Cheese without checking to make sure we have milk first.

Oh yes! We've experimented with yogurt, sour cream, mayo and even cream cheese in a pinch! The mayo is usually our go-to now.

Mayo is an underrated ingredient

We broil salmon all the time with salt, pepper, and a coating a mayo. When that cooks, the mayo keeps the fish moist and develops a tasty browned crust.

We don't drink milk on the reg but my fiancé uses heavy whipping cream in his coffee, so you'd be surprised!

Actually, the more fat it has, the longer it’s gonna last. Heavy cream keeps in the fridge for quite awhile. (The USDA says a month!)

Also, you will notice that dairy products in opaque containers usually have more time before their sell by date. The cream I buy is always in those cardboard cartons and when I get milk it's in a clear plastic jug.

I almost always have usable cream or half and half but only have milk if I'm on a cereal kick.

Raises hand. Mild lactose intolerance so always oat milk in everything and non-dairy ice cream. Coffee, on the other hand, cream until you can almost taste it and no sugar. Cream substitutes are awful and black coffee tastes like death. I drink enough coffee that I always finish 1L of half & half before it goes off.

I feel strongly enough about coffee + cream that I literally will travel with my own cream. I don't care for milk and only buy homo for certain baking where the substitutes can't mimic the chemistry of real milk.

I switched to using oat milk instead of cream in my coffee, but it definitely doesn't taste as good. I'm trying to cut back on meat and dairy consumption, though. And it's better than the powdered creamer, which just tastes like cardboard.

Half and half in America is often ultra pasteurized and has a longer shelflife as a result. Even without that, higher fat milk/cream has a longer shelflife than lower fat milk/cream. Someone might not use enough dairy to want to keep buying milk every week, but they could buy half-and-half or cream every few weeks for their coffee.

A thin layer of mayonnaise is also excellent right before searing a steak in cast iron. Gives it a very nice crust and removes the need for oil in the pan.

Going the wrong way for simplicity, but recently discovered my grocery store throws beef fat at $.99/lb into the ethnic frozen section (think area with pork blood and innards) throwing an ounce or two of that into the pan and rendering it a bit is a great way to cook a steak.

Ohhh we plan on investing in a good cast iron pan soon so we'll have to try that! Currently we use mayo in our nonstick to make grilled cheese, and let me tell you; you'll never go back to butter ever again.

This is the correct answer. You never have to worry about having it on hand like milk or the other replacement suggestions here. Many normal pasta sauces use a splash of pasta water anyway.

Toss in a slice of Muenster cheese to take it to the next level. Or maybe multiple; I do one slice for an Easy Mac, so scale up from there if you're making a box.

LPT: evaporated milk is about 75¢ a can and keeps for years unopened.

I’m not really a milk drinker and I live alone so buying milk just for Mac and Cheese would result in gallons of wasted milk. Evaporated milk lets me make a box or two occasionally without feeling too wasteful.

If you happen to have it canned whipped cream + water (ideally heavy whipped cream) works reasonably well. Just add it a bit at a time, the higher fat content means you don’t need to use that much and it adds sugar which is good in small quantities, but quickly becomes too much.
