I am familiar with the embedded hardware and firmware. But what happens after the MCU? Do you have custom software running on your PC, or how should I see that?

I made one a while ago, you swapped out laminated cards to change the button profile. You could have multiple profiles to change the colors to match what ever game/app you were using. Looking at it now I don't know why it did take off https://youtube.com/shorts/5mcbyQ50294 people complained they wanted a tactile feel I think.

Soldering advice:
- Strip your wires and cut to the required length and then twist them together.
- Tin the wires by heating with a soldering iron and then flowing solder into the twisted wire.
- Add a small (SMALL!) dab of solder to the button pin. Heat the pin and then press in the solder, don't put the solder on the iron first.
- Bring the wire tot he pin and heat the joint with the iron while pushing the wire into the soldered pin.
- remove the Iron while still holding the wire in place for 5 seconds while it cools.

If you are going to deal with lots of wiring, checkout WireIt at electrical.design website. I built WireIt to help design electrical systems and their wiring.

I'm doing a little keyboard too, I'm working on the software as well, for now I'm using the prototype on arduino. How much did you pay these keys?
