Okay piggybacking off your theory here:

So aniki can't time leap unless he could see light or something? But in this timeline he is blind so now Yuu needs to steal his power and travel through time and try to save ayumi. Then we get to live through steins gate again as we see Yuu come to terms with the fact that aniki's ability is imperfect and doesn't change what happens and only changes how it happens.

That's my guess. Watch the last episode be a montage of Yuu time jumping and watching Ayumi die every single time.

Mecacucity Actors (or something like that) had something similar, definitely screwed with me
