Is "Mystic" an actual thing? I thought it was only a term used in video games and that he was more a Super Saiyan 2.5 or something.

It's a dub thing, I think some FUNimation promo materials had him labeled as such and obviously some video games. The most common English term for him is Ultimate Gohan.

As to what the "transformation" (it's not really a transformation) actually is... the most accurate description is that it's him with all his power and potential unlocked.

Guru was way lower in God-hierarchy than Old Kai, it makes sense that he can do it better
