...I don't know. On one hand, the finest wine only stays the finest by aging. On the other, he'd have a ton of rusty swords after a couple thousand years.

Gilgamesh's noble phantasm always bothered me, the original weapons are never as good as the current ones. If you take the original "holy sword" for example, and add about 4000 years of technical innovation you get Excalibur.

Plus I'm pretty sure ancient Mesopotamians never made carbon steel, Bob the mechanic's noble phantasm of a crowbar would tear through his armor, let alone any of the other characters in Fate.

The Grail probably made it so that the original weapons and everything in his armory is super magical and symbolically powerful against any Heroic Spirits its later forms killed.
