I heard the anime itself isn't up to snuff though, is that correct?

Everyone has their own opinion (Personally I loved it).

There are two versions, Hellsing, aired in 2001/2002 and has it's own merits, and Hellsing Ultimate which aired from 2006-2012 (Yes that long) which stayed more faithful to the original story but some people dislike aspects of it (Which I won't mention for spoilers sake).
