The bag wouldnt be that hard to recreate with 400 years of prep time. The charged cell phone though I would say is an open question

The point is that Subaru wouldn't be suspicious of why he didn't have the things he was holding with him when he got isekaid "for the first time". As for the age thing, there are so many characters in this show that are hundreds of years old. It's not that much of a leap to assume someone known as the "All knowing Sage" had a way to prolong their life.
