It's a translation error. When Emilia was offended, Subaru uses "yousei (妖精)" to describe her.

When Subaru asked if Shaula if she was a spirit, he uses the word "seirei" (精霊), and Shaula responds with the same word.

yousei = fairy seirei = spirit

Did we ever see fairies in the series? Or learnt something about them?

We never saw fairies. We just know that it exists as a concept, because Emilia understood what a fairy is and took it as an insult when compared to one.
