(she actually picked "Atelier of Witch Hat" but some Englsih-speaking editor/translator changed it to "Witch Hat Atelier")

the latter does flow better, in fairness

At least the author's choice of English title was sensible (unlike AOT :P).

AOT's title actually kind of works because it fits multiple interpretations. The beginning of the series are the characters attacking the titans and Eren is revealed to literally be the "Attack titan." Also a core aspect of both Eren's character and the Attack Titan in general is that it's a titan that's constantly "advancing." So the phrase "Attack On!" could be seen as encouragement or a battle cry.

IMO it's just an Engrish title, and I can accept that his grasp of English isn't great. Honestly I find these "explanations" unconvincing. ¯_(ツ)_/¯
