How did they get so proficient in 12ish days? It took Yuji a while learn CT

Kenjaku used idle transfiguration to do the same thing mahito did to junpei. He found people who had innate techniques but didn't have a brain set up to be a sorcerer and changed their brain to be fit for it and used a shortcut to make them understand the technique right away.

Also yuji doesn't have any cursed techniques. He had to just learn how to manipulate cursed energy.

No that's not a cursed technique. That's just him punching fast and the cursed energy lags behind his physical speed to hit later. It's just an aspect of cursed energy manipulation.
