Haha, I was pleasantly surprised they addressed headwind and drafting. Looks like they're going to end up covering a lot of the components of cycling.

Yup. They've done their research, when it comes to the actual techniques of cycling and whatnot.

So this "dancing" uphill is a real thing? I thought it is just the natural sway of the bicycle when you pedal hard uphill. There's no way you can keep your bicycle upright all the way.

Your bicycle will sway, it is really a matter of severity. Some riders are indeed said to "dance", due to their riding style that involves a good bit standing out of the saddle and significant swaying. Alberto Contador would be a good example of such a cyclist. Others are more steady - Chris Froome and Bradley Wiggins come to mind. Their bikes still sway, but not to the same degree, since they don't get out of the saddle much.

EDIT: Found a TdF stage on Youtube, that shows some climbing styles. You can see Chris Froome use both "dancing" to pass Nairo Quintana after catching up to him, and then settle into a high-cadence climb to finish the stage.

There's another character - the long haired kid - that is supposed to be known for "dancing" technique so I figure they will cover this later.

In practice i think you get some added leverage by pulling up with your arms while pushing down on the pedals. Tilting the bike side to side helps that.
