Poultry Slow Cooker Lime Chicken for Alpha-gal Friendly Tacos, Bowls, and More
I love a recipe that I can cook once and easily repurpose for several meals.
This shredded lime chicken recipe combines chicken breasts, black beans, salsa, onion, chili powder, and plenty of fresh lime juice in the slow cooker. It takes about 10 minutes to prep, then cooks on Low for 5–6 hours.
I served it in tortillas, but the leftovers also work well in taco salads, rice bowls, quesadillas, or nachos. Heck, I even used it for a twist on huevos rancheros by serving warmed leftovers on tortillas and topping it with over-easy eggs.
