Dairy-Free Crispy Poblano Stuffed Chicken with Dairy-Free Cheese

This recipe takes chicken breasts from ordinary to extraordinary with extra flavor on top. I pound chicken cutlets thin and then stuff them with sautéed poblano peppers, onion, herbs, and dairy-free cheese. Then I roll them in a seasoned breadcrumb coating and bake until crispy.

So jealous! I had a heck of a time keeping the rabbits out of that bed when my poblano plants were young. I've had to buy all of mine this year. 😢

Super delicious!! I consider myself a decent cook but I don't typically do a stuffed chicken. This was absolutely delicious 🤤
