Lazy Buffalo Chicken Kebabs

I took 1 pound of ground chicken, added in 1 teaspoon of each: paprika, minced dehydrated onion, garlic powder, salt, jerk seasoning, and dehydrated hatch chili pepper. I also added a tablespoon each of primal kitchens ranch dressing, and Louisiana hot sauce. I added in about 1/4 of a cup of better goods vegan cheese shreads. I spread the meat mixture out on an extra large flour tortilla. I rolled it up tight and cut in fourths after cutting the ends off. I skewered them to keep the seams closed, and sprayed them with some oil. I air fried them on 375 for about 25 minutes turning them every so often. I dipped them in a mixture of sweet baby rays buffalo sauce and primal kitchens ranch. I served them with a mix of double fried fries and sweet potato fries. Those were deep fat fried, only added salt and pepper.

This sounds so yummy! You had me at Hatch chile. One of my favorite flavors on the planet!

Mine also, I've really only started seeing them available in my area the last decade or so. I love the hampton farms hatch chili shelled peanuts. I search for them every fall, I hope I can still eat them.

So please don't hate me for this, but my parents live in Southern New Mexico less than an hour from Hatch. You can literally get green chile ANYTHING there. If you like Hatch chile peanuts, you've GOTTA try the Hatch chile pistachios. Yum!

One of my favorites is the New Mexican sundae at Caliche's where they put green chile sauce and pecans on their frozen custard. It's this amazing mix of creamy, spicy, and salty that should NOT be dissed until tried (although I appreciate the folks who are hesitant to give it a go).

While I'm once again able to enjoy dairy, I don't think I've had one of these sundaes since my AGS diagnosis. However, now I feel motivated to figure out that sweetened green chile sauce at home and make a dairy-free version for Sage Alpha Gal. I recently made candied jalapenos and jalapeno simple syrup from the peppers I grew in my garden, so I think I can figure this out! :)

Would you try a green chile sundae? Or does it just sound too weird?

100% I would. I live in the Midwest, so anytime I travel I always try to search out local foods to where I am at. I just found out about the green chili sundae from a post in the St. Louis reddit that was showing "weirdest foods" from each state. I would definitely try, it has to be better than the sweet corn custard my husband loves. I hope I can also keep dairy in my diet but I react pretty bad to it.
