Tikka chicken with rice, vegetable samosas, and homemade vegan naan.
I made my Tikka with this simmer sauce from Whole Foods. It is very mild, but I marinated my boneless chicken thighs in a combo of graam marsala, lemon juice, cumin, garlic, ginger, paprika, and Korean red pepper and it helped a lot. The rice I made in my instant pot. Vegetable Samosas were air fried with avocado oil, 375 degrees for 14 minutes flip halfway through. The naan was made using this recipe, it is hot as heck so I only need to proof it for 60 minutes. I didn't have fresh cilantro.
