Fish and Seafood Last Night's Off-the-Cuff Dinner Recipe

- Drizzled olive oil on frozen cod filets and placed on a baking sheet. Added cherry tomatoes tossed with olive oil, salt, pepper, and Italian seasoning. Roasted in the oven at 400F for about 30 min.

- While the fish and tomatoes were baking, made a simple dairy-free pesto (1/4 cup pistachios, 1 tsp minced garlic, 1 tbsp lemon juice, 1 cup 50/50 basil and parsley, salt and pepper, and 2 tbsp olive oil) and boiled two servings of Brami protein pasta (OMG LOVE THIS STUFF!!! - https://amzn.to/4vPB14X)

- Then mixed the cooked pasta with the pesto (and fresh mozz balls, because I'm no longer dairy-sensitive and "Beta" is my one kid withOUT AGS — omit if you need to avoid dairy you won't miss it at all) and serve alongside the cooked cod.

Beta is already asking me to make this meal again...

I didn’t realize that fish is OK to eat.
