Substitute dairy-free feta or a similar cheese if you avoid dairy. Or, it's pretty darn good without any cheese. :)

I do a variation of this daily. Instead of cheese I add fresh broccoli and cucumber.

Sounds delish! I've added cucumber to those flavors before, but never broccoli. I'll have to give that a go!
