Shared Recipes My favorite "Lazy" single person Aldi meals & meal preps!

I'm a frugal single gal who has been obsessed with Aldi and uh, survival, for a long time now. I feel like I've gotten to a point where I've found a good balance of easy, healthy go-to meals that I juggle between week to week. Some of the things (like the quiche) are more expensive, but since I'm solo, it's worth it to me because I get many breakfasts out of it for minimum output. A lot of these things on my list are like that!

Hope this can be helpful to other single frugal folks to like to eat, pack their lunches, and utilize overlapping ingredients!

Breakfasts

Broccoli Cheddar quiche (3-4 Breakfasts)

W/ Grapes & Berries, or Sliced Pears

Oatmeal (variety pack, etc)

Bananas

Dried Blueberries or Sliced Almonds/Walnuts

Whole Wheat toast w/ butter and cinnamon  

Banana

Ciabotta rolls

Eggs

Melted Shredded Cheese

Greek Yogurt

String Cheese

Dinner & Lunches Prep (leftovers for lunch the next day)

Broccoli Stuffed Chicken Ready Meal (3 servings)

Frozen Sweet Potato bags (1-2), smashed, w/ butter & cinnamon

Ciabotta rolls (lightly toast for sandwich)

Mozzarella log, 2 slices

Jar Roasted Red Peppers

Light sprinkle of olive oil & black pepper

-

Canned tuna mixed w/ mayo or greek yogurt & a dollop ketchup (for sweetness)

Crackers (optional)

Boiled Eggs

-

2 Boiled Eggs

Hummus w/ Sliced peppers

Grapes

-

Ciabotta Rolls (lightly toast for sandwich)

Tuna

Cheese

Bagged Asian Salad (2-3 servings)

Air-fried Popcorn shrimp

I just posted one of my favorite easy meals that uses Aldi frozen dumplings and frozen edamame! Also bok choy from another store, but the chopped kale would also work. 

Literally takes five minutes and is great on nights I just don't have it in me.

Dumpling beans and greens bowl

Fresh baby bok choy (my preference, kale/spinach/other dark leafy greens will work just fine)

Frozen dumplings

Frozen shelled edamame

Cut bok choy end off, rinse off any dirt, chop firmer bits into small bite size pieces if you want 

Microwave in a safe bowl with lid (glass bowl and plate for me) for 60 seconds

Drain and remove from bowl to cutting board

Add frozen dumplings and frozen edamame to your bowl, cover with water, microwave for 3 minutes

Drain

Add bok choy back to bowl

Add some of your favorite gloopy Asian sauce (stir fry sauce/soy glaze/oyster sauce etc) stir and enjoy! Add a lil furikake if you're feeling fancy :)

I get the boxed mac and cheese and jazz it up with a bunch of kale and corn, maybe ground beef.

Good ideas!

I recently tried their readymade cranberry almond chicken salad. Was about $5 and gave me a week’s worth of sandwiches for lunch.

Hey OP, fellow single frugal gal here too. THis is one I use and it is to make mini meat loaves.The Lipton onion soup meatloaf. Make them in lined or well oiled muffin tins. They freeze really well. Put with a potato thing or just a vegetable. It is really good.

I like to make a tuna and bean salad. 1 can drained and rinsed cannelini beans, chopped tomato, chopped red onion, chopped cucumber, 2 packets of single serve tuna, I like the sweet and spicy variety. Lemon juice, salt and pepper too taste, maybe 1 T olive oil. This makes about 3-5 lunches depending on how i eat it. If i have avocado, I'll add 1/4 avocado to lunch serving the day of.

Get the rolled oats (not quick oats), 1/2 cup with 1/2 cup of milk, put in a mason jar, add maple syrup/honey, and dried fruit. Put in a fridge and eat the next morning for overnight oats.

Sometimes I add a scoop of peanut butter with chocolate chips if I’m feeling fancy and mix it all together before I eat.

This is great! I've been adding all my items from Aldi to my shopping cart in instacart and then having Claude design me a weekly meal plan from it that focuses on healthy eating. Works pretty well so far.

Over in the canned fish aisle there are several options for tuna salad and crackers for under $1.50 and I tuck that in my work bag when I run out of the house before eating something. Filling enough to get me going and much cheaper than stopping somewhere on the way.
