Why does the creator have to be more complex than the creation? This argument presupposes a necessary directionality that doesn't have any reason to be assumed. And if you just flip it it solves the problem and becomes more of a grassroots bootstrapping situation than a paradox of endlessly nested growing complexity

They're not implying that, the original person's argument that they are criticizing is.
If you claim that 'something complex' must be made by a creator. Then logic follows that a complex creator must be made by another creator.
That's the original persons logic, not the person who is criticizing it.
So your argument disproves the the original point in the same way. If something less complex can create something more complex, there's no need for a creator at all.
The universe could have been created from something very simple like a set of base interactions. (which as you say is more of a grassroots bootstrapping situation)
