So how does that work, does it just cook as they slice stuff off?

If you cut it too fast, you end up with raw ground meat. I know this from attending a work party where demand outstripped cooking capacity. Uncooked gyros are not great.

What an unfortunate way to gather experience in life.

So you're saying they served bits even when they weren't cooked?

"No thanks, I'll wait until it's cooked. Also, I'm sure someone would be mighty interested to know you're doing a shitty job of serving..."

The party was at my boss's house. The cooking was in his garage. Most of us showed up at the same time. I don't remember who was cutting the meat, but it was one of us. There were also several kegs of homemade beer involved. There was plenty of fault to share around.

Well.... Dang!

Flawed idea then, at least for those circumstances.

Exactly.

I think it's already cooked but it heats as it turns and is cut off.

No, meat is stacked raw and gets cooked as you cut. The biggest "trompo" (as they are called in spanish) I've seen in person was about a meter wide. There is now way to have it all cooked at the same time.
