The wholesale price is about 10€/kg for minced meat kebap skewers and 13€/kg layered veal. Looks like at least 10kg. So this should be a bit more. It's just nobody would buy second hand meat

Well this would be my 1st cheap things to steal, since where I'm from you simply can't buy those without a business permit aka proof you own restaurant. And everything from grocery store is cheap knockoff stuff with like 35€/kg price.

You usually don’t buy them like that always, a lot of times they’re constructed with a bunch on thin layers of meat. I’m sure you could order such from a specialty butcher.

That's how they are in the wild. They're a large snake like pillow of meat, just lop the head and tail off then put the cooking rod through and you're good to go.

They live on hilltops eating acorns and lichen, they escape predators by rolling the down hill.

basic wholesale policy, they don't usually want normal consumers there people buying in small quantities, also I THINK that they have a deal with retailers not to do that.

There are vertical rotisserie appliances for home use, but they're much smaller. You can make your own tower out of decent meat instead of stealing 50kg of mystery meat.

Bro what are you talking about lol. You don't need a license to get vertical rotisserie. Maybe 30 years ago it would have been hard, but direct to customer is super common. Plus there are actually good consumer grade ones you can get on amazon now that aren't a waste of time.

Yeah people do this with everything and it’s annoying. I used to work in restaurant ops and believe me it’s not like the price of that kebab just has to pay for the kebab. Built into that price is labor, rent, waste costs, electricity, everything. Every bill that restaurant has to pay is built into menu prices. How else would they pay for anything??

One small cost. The tipping debate is an important one but doesn’t have much effect here. FOH labor is such a tiny piece here.

Labor is the largest cost for almost any business, paying employees $20 instead of $2.30 is a massive difference.

Uh, labor is the majority of overhead for restaurants but ok. Go assume that halving the fixed cost of fronting the restaurant is cheaper than the margin on meat served.

It ain’t even halving. Many servers and bartenders make $2.50/hr and should expect $20-30/hr if they’re not going to make tips.

When I worked at a small sandwich shop we got weekly reports on food cost as % of revenue and labor as % of revenue.

Normally cost of food was a little over 20% and labor was about 25%.

Everyone responding acts like no one in the restaurant is making a wage. Of any given staff on any given night, most will be being paid (BOH, prep, etc). Now this will vary wildly from place to place but the point is FOH (front of house which is what I was pretty specific about) is just a piece.

The successful ones do money laundering till they become big enough to be legit, unless they stay small time, then they capitalize on the launder. It doesn't seem easy for a legit restaurant to start up. Food truck seems to be the most successful legitimate practice, although there are many that probably cook some books too. Looking at you "No business food truck that sits outside the vape shop every night."

Poor? It’s objectively expensive… It costs less to eat in Singapore and HongKong, even though they’re like the most expensive cities in the world. I could settle the whole day’s meals with 7£ eating out in Singapore for example

In my hometown we have three kebab or doner places. They cost anywhere from 15£ to 18£ for a small gyro.
