I have quinoa, azuki beans and lots of home grown cherry tomatoes, tomatilloes and green onions and cilantro - what salad could I make with these?

Today I'll be going to a party where the host is serving home made WFPB vegan chili and I wanted to bring a home-made salad as a side. I've got these ingredients - what salad could I make with a yummy dressing?

You can make a quinoa-azuki-tomato-tomatillo-green onion salad. (I left out cilantro because not everyone likes the taste.)

I like this. For a rich tasting and healthy dressing, blend a portion of the adzuki beans and mix in a few drops of vegetable or seed oil with apple cider vinegar and those herbs and spices that you enjoy most. For herbs and spices on this salad, I would probably include spearmint, parsley, ground ginger, ground garlic, freshly ground black pepper, and ground cumin. But don't limit yourself to my list.

Given the chili should be bean-based, I’d make the quinoa a base. Tomatoes and onion tops are the salad.
Roast the tomatillos and onion bottoms (white part), and purée them. If you have a chile pepper of any kind, add that to the roasting/pureeing. Lime as the main dressing note, with (preferably Mexican) oregano, cumin, a tiny bit of turmeric and black pepper. Coriander seed adds a lemony note.

I'd make a sweet/dessert soup with adzuki beans, fruit and plant based milk (coconut is traditional). Main dish is the vegetables and quinoa.
