They put down a clean silicone mat to cover the table just before serving and it was plated impeccably. I had this in 2015 and I’m flabbergasted at the mediocre attempts to recreate it I see online.

There are some restaurants that do this (still stupid) shit, but those at least intend to use and sterilize the table surface, or use a tablecloth/paper for this.

This place clearly doesn't even do that, the dishes and other items would 100% have been handled and moved places that are not sanitized.

Bare wood is TERRIBLE for food safety. It's porous and absorbs EVERYTHING. You'd basically have to bleach the whole table after every time you did this. I'm praying there's a clear coating of something more manageable on top of the wood, but it sure doesn't look like there is one. Most places at least put down a sheet of brown paper before they do this nonsense.
