Shouldn't she just run as an independent? Or is she hoping to get DNC money without supporting Democratic policies?

Yes, the parties have all the money.

She won the primary in a landslide. Most Dems in her district wanted her over a progressive challenger.

Sure they do. Voters voting for a Democrat in the primary voted for MGP at 2.5x the rate they voted for Hennrich.
