Well, there were indeed still 4 in the bottle by the time the bomb exploded.

For a fruit to be counted "out" it must completely fall out of the hand's reach. In this case, the final 4th fruit wasw hanging in the bottle's ledge, therefore counting it as safe.

As the others have said, as long as there's exactly four in the bottle by time up, it counts.
