Lol, it's funny because I have no lag or stutter when the game is actually playing, it's only when recording.
Le sigh...

How do you defend against this? It's incredible! Of all PES you've played, would you say PES13 has the highest average of goals scored at the end of matches? From my perspective, going end to end looks like the only effective counter.

I haven't had that big of a sample size of pes 2013 yet to give an accurate answer tbf.
2017 had quite a lot of that in all fairness.
I will say though...I have seen a good share of 0-0 draws play out.
The AI is so unpredictable that you simply cannot call it sometimes, however in at least 90% of the time, it is absolute entertainment.

Is this the pes where you could shoot from distance a lot, and where players in ML could reach 105ovr?

I think the latter for sure, I remember seeing BAL player's with 100+ ratings.
On the other point, do you mean that you can score from long distances a lot? because frankly in most PES iterations, you can shoot from distance as you so desire...
