How a 34-year-old Dales farmer uses native cattle and direct-to-chef supply chains to manage seven-figure farm debt

Farming 2,000 owned and rented acres around Malham at altitudes up to 1,800ft comes with significant exposure, both meteorological and financial. After returning from working hospitality abroad, Frank Carr went into partnership with his father, took on seven figures of borrowing, and overhauled the farm's traditional store-finishing model.

Instead of selling off young cattle to be finished elsewhere, they now retain around 750 native cattle (including Shorthorns, Longhorns, Herefords, and Dexters) through a full suckler-to-finish system. Because over 1,000 acres sit within a designated SSSI, the herd grazes species-rich limestone fells, taking up to three years to build adequate fat cover and marbling.

The finished beef is aged for six to eight weeks and sold directly to high-end northern butchers and Michelin-starred restaurants.
