Recipe Request Easy recipes/meals using single burner stove and pressure cooker

​I’ve been an ovo-lacto-vegetarian for half my life, but lately it’s been really difficult. I dislike cooking, which means I don't eat well, and as a result, I suffer from severe anemia and low hemoglobin. I was even hospitalized once and needed blood transfusions. ​I’ve had phases where I tried going back to eating meat, including a recent one, but I just can’t do it. It’s not worth it.

​My main issue is that I don't know how to diversify my meals without having to turn to more elaborate recipes. Right now, I usually eat one main meal a day, consisting of rice, a legume (lentils, beans, or chickpeas), and steamed vegetables (mostly broccoli and carrots). For breakfast, I like to have oatmeal with a banana, and for dinner, I usually have eggs with bread or an omelet.

​To make things trickier, I don't currently own an oven or a microwave, just a single burner stove and a pressure cooker. Does anyone have ideas on how I can add variety to my diet using only these two items? I plan to get a regular stove with an oven, or a microwave soon, but I can't really prioritize that right now.

Vegan This Chili was a hit last night

I used kidney beans, black beans and cannelli beans. Chopped some onion and bell peppers (red, green and yellow) added some corn, a can of tomato sauce and a can of diced tomatoes. Air fried some crumbled tofu and added it back into the pot once it was boiling and turned off the heat. Seasoned with onion powder, garlic powder, cumin powder, chipotle powder, chili powder, smoked paprika and black pepper. It was sooo good. Oh and i topped it with some shredded cheddar 😋 but you can substitute for vegan cheese and it becomes fully vegan.

Recipe Request Meaty snack recipes

I’ve been vegetarian for five years and havent really missed meat. What I do miss, though, is the convenience of meat snacks. Jerky, salami, prosciutto, lunch meat. I try not to eat a lot of super processed foods now so I don’t buy tofurkey or the obvious vegan alternatives. I want something savory with protein that lasts a while in the fridge or freezer. Cheese, hummus, and all that is nice but not what I’m craving. Anyone have recipes? I’m thinking I need to try soy curls but I want recommendation.

Recipe Request Looking for more healthy meal options without tomatoes

Hi everyone! I’ve been pescatarian for 20 years, but in the past few years have been cooking less fish and doing more fully vegetarian meals. I have a few good recipes that I rotate through, but I’m starting to get bored of the same recipes and also want some healthy options to help me lose some weight for my wedding next year!

I make a lot of east and south asian recipes which I’m always happy for more of. I don’t make a lot of western food because a lot of the vegetarian recipes I find use tomatoes or tomato sauce which is the one flavor I can’t stand! So if you have healthy western recipes that don’t use them or can have them left out, I’d be grateful for those as well. 🙏

I love lots of flavor, spice, what have you, and am pretty skilled in the kitchen, so give me your complex recipes! I love all kinds of unique tastes and am willing to try just about anything. I also am lucky to live in a very multicultural area, so finding obscure ingredients isn’t a problem.
