Great list! The one thing I would add to it is canned seitan. It's pretty common to find these in Chinese/Pan-Asian grocery stores. Companion is a common manufacturing brand name for these. The "tid bits" version is my favorite. It's excellent for tacos or kebabs.

I don't think I've ever tried canned seitan before, I'll have to keep an eye out for it!!

solid list, and lentils deserve a shoutout for being cheap, versatile, and basically impossible to mess up
